500 g spinach
2 onions
2 tsp butter
350 g breadcrumbs
2 eggs
125 ml milk
1 pinch of salt
2 tbsp flour
Parmesan cheese and butter for garnishing

Ingredients for 2 people
Level of difficulty: medium
1. Chop the onions and fry them in butter.
2. Steam the spinach with the onions and leave to cool, then chop coarsely.
3. Mix the bread cubes with the egg, milk, spinach, onion and a little salt.
4. Add the flour to the dumpling mixture and form dumplings with wet hands. If the dough is too soft, add a little more flour.
5. Leave the mixture to rest.
6. Place the dumplings in gently boiling salted water and leave to simmer for approx. 15 minutes.
7. Serve the spinach dumplings with browned butter and grated Parmesan cheese.
